Cantinas in old México had their origins in colonial times, when the Spaniards first settled in. The Tavernas, as they were called, quickly became the hub of the town’s social life, to be enjoyed with a healthy beverage, accompanied with a small bite to eat, or bocadillo. What was known as tapas in Spain, was converted into bocadillas and botanas in México. Prepared with local ingredients corn, beans, peppers, and more they would be passed around to patrons who enjoyed their favorite libations and the flavorful "small bites".
Legendary Cantinas flourish throughout the country. In the cities, fortune-tellers, musicians, poets and shoeshine workers, would go around offering their trades. The cantineros' service was generous and efficient, but most of all, friendly... everyone was considered a guest of an ongoing fiesta and treated as family.

The tamarind fruit
grows in central Mexico as a long, dark pod with a sweet and
sour pulp. A favorite traditional candy when sugar coated.
Our secret recipe is homemade from agave
nectar harvested by Indian natives in central Mexico. The
pineapple shaped agave plant secretes its nectar into the
center of the plant (rather than into flowers like
most plants do). After slicing off the tip of the plant and
hollowing its core the plant is capped with a
stone. Several days later the milky white juice or “aguamiel”,
is removed by ladle, one plant at the time. It
has both organic and kosher certification and is recommended
for low glucose diets as it has a relatively
low glycemic index due to its higher proportion of fructose
and lower levels of glucose.
